Roast lamb with potato

Ingredients:
1kg lamb (joint or leg)
5 medium sized potatoes, peeled and sliced into 1cm thick
5 tbsp olive oil
½ cup of milk
4 garlic cloves, chopped
Salt
Black Pepper
Rosemary

Method:
1. Heat oven to 200oC. Make deep incisions all over the lamb using a small knife. Season the lamb with salt, pepper and rosemary, and push the mixture into the incisions.


2. Put the lamb into a roasting tray, drizzle with olive oil and put into the oven for 20 min.


3. Boil the potatoes with salt water for 5 min, drain them and season with salt and pepper.


4. Take the lamb out of the tray, arrange the potatoes on the tray and pour in the milk. Put the lamb back on top of the potatoes and roast together for another 40 min.
